
Vegetarian burrito with 5 ingredients
Got some leftover cooked rice in the fridge? Make a tasty burrito in no time!
For 6 people
Ingredients:
2 cups fully cooked and warm brown rice
14/5 ounce can black beans (rinsed, drained and reheated)
4 ounces shredded cheddar cheese
1/2 cup pureed salsa
6 fajita-sized whole-wheat flour tortillas
Directions:
1. Preheat the oven to 375 degrees F.
2. Stir all ingredients except tortillas together in a medium bowl.
3. Heat each tortilla one at a time in the microwave for about 10 seconds. Or wrap the whole stack in a damp paper towel and heat for about 30 seconds. Remove the towels one at a time.
4. Add ½ cup of the bean and rice mixture to the center of each warmed flour tortilla (I use fajita size), fold in the sides and roll up.
5. Place seam side down on a baking tray lined with parchment paper.
6. Heat them in the oven for about 8-10 minutes to warm through. (Or place them seam side down in a greased pan over medium heat for about 2-3 minutes each, or microwave for 30-60 seconds.)
